Vacation!



In honor of today being the first day of Easter break, I made
tropical oats for breakfast this morning.
1/2 cup of oats
1/2 cup of chocolate silk
1 tsp carob powder
1 banana mashed in
1/4 tsp vanilla extract
1 tbsp flaked coconut
2 tbsp dried pineapple

Holy wow that's a lot of ingredients for just a bowl of oats.
No wonder I wasn't very hungry for dinner. That and up until
this very afternoon I had been having some digestive issues. I
really only get constipated a few times a year, but when I do its
pretty bad. I'm used to going a few times a day so once a day for
me is like not going for a few days. Sorry for the T.M.I.
Anyway I decided to stay up at college for my Easter break
but in about 45 minutes the boy should be knocking on my door.
We're going to celebrate Easter together and then my sister will
be visiting me from Sunday afternoon to about Tuesday afternoon.
To be honest I wish my boyfriend was staying the entire time
but I do love my sister and I will be happy to hang out with her.
I just hope she doesn't get too terribly bored up here, there's really
not all that much to do. On the bright side, she agreed to try
being vegan while she is with me, YAY!
Anyway, I am going to try and squeeze in a nap before the boy comes.
I have a feeling I won't be sleeping all that much tonight ;)

These are a few of my favorite things...




So I'm not going to document my meals today, mostly because I'm just trying to use up leftovers/things I bought waaaaay too much of and they're pretty repetitive of the things I've eaten in the past couple of days. Pictured up above though, are a few things that I like to think of as essentials. The first being b-12 supplements. When you are vegan, unless you consume b-12 fortified foods and beverages, you are at risk for becoming deficient, which I've heard is definitely not a party. The second is cashew butter. Or any really good, relatively unprocessed nut butter. My favorites are cashew butter, Teddy brand crunchy peanut butter and PB&Co Dark Chocolate Dreams peanut butter. Note to anyone on the 7th floor of my dorm reading this: stop in and try my nut butters anytime you want, I've got plenty! The third item is one of my all time favorite liquid snacks: Naked juice. Its so good and so good for you, I definitely recommend them. My favorites are Gold Machine, Strawberry Banana and Berry Blast. Some flavors taste a little off, but that just might be me. Anyway, I have to wrap this post up because it's almost time to go to Bio Ethics, quite possibly the most boring, draining class I've ever had to attend. I just text or come up with oatmeal ideas the entire time ;)

that right there is dark chocolate cherry oatmeal.
i definitely nommed on that...i've decided its much
easier for me to eat a brunch mondays-wednesdays-fridays.
i have spanish tooooo early and i'm just not hungry at 8 am.




and that right there is a lovely salad i had for dinner.
1/2 a pear, dried fruit and sliced almonds all in a nice
balsamic vinaigrette alongside a HUGE chunk of dense
multigrain bread. i definitely underestimated how dense
the bread would be. definitely taking a smaller chunk tomorrow.

1 medjool date
2 carob covered rice cakes

i requested the coconut butter sample, hopefully it will come
soon. today was a really good day, i have rehearsal soon though and
i am exhausted so i'm going to try and catch some z's.

Hehe, like my cheery breakfast? It was a lovely way to start the day. I am LOVING being vegan. I am still trying to figure out this whole blogger thing and somehow my photos uploaded in reverse order. So here's how things really went, I had the bagel thin with 1 tbsp natural teddy pb and a banana for breakfast. Un-pictured were my chunks of carob that I had between breakfast and lunch. Lunch was an apple with 2 tbsp cashew butter and a piece of whole wheat baguette. Snack was dried fruit and nuts and I also had a medjool date but that got buried. Then dinner was tofu marinated in teriyaki sauce and some veggies but I didn't think to take a picture until after I had eaten so I just had the tofu container to go by, I guess you'll just have to take my word for it ;)

I'm trying to lose approximately 4-7 lbs(right now I'm 5'2" and 112...I was about 107 before I came to college though, meh) so I'm eating between 1300-1500 calories, a decent amount though I can definitely pack in more when I want to. I was pleasantly surprised at how filling the tofu was, I'm definitely going to have to pick some more up from the union here at my school, it was super nommy.

I'm currently having some digestive issues...I really hope that they resolve soon. I'm thinking I might not be drinking enough water to compensate for the amount of fiber I'm consuming, I will have to work on that. Anyway, I have to run for the library and study my anatomy test tomorrow. My modern teacher feels the need to make us learn about the human body's many muscles, bones and other facets...ugh.

So its my first post, yay!

Some background info:

My name is Taylor and I am 18. I'm currently a dance major at SUNY Potsdam and I created this blog to document my "journey" into becoming an eco-friendly vegan college student. I will post my meals, daily "happenings" and whatever else I find relevant. Happy reading ;)
